How to Make Homemade Rhubarb Gin with Pickering's Gin

What You'll Need
- 500ml Pickering's Gin
- 2 fresh rhubarb stalks
- A clean jar with a lid (we used a 700ml jar)
- Optional: 1 split vanilla pod
How to Make Homemade Rhubarb Gin
Step 1: Prepare the Rhubarb
Wash your rhubarb stalks thoroughly and chop them into evenly sized chunks. Add the chopped rhubarb to your jar.
Step 2: Add the Gin
Pour in the Pickering's Gin until the jar is full and the rhubarb is completely covered. We used approximately 500ml of gin with two rhubarb stalks.
Step 3: Add a Little Extra Flavour (Optional)
For a subtle hint of sweetness and warmth, add a split vanilla pod to the jar. This step is entirely optional but works beautifully with the rhubarb and gin botanicals.
Step 4: Leave to Infuse
Seal the jar and store it in a cupboard or on a shelf away from direct sunlight. Over the next few days, you'll notice the colour gradually leaving the rhubarb and infusing into the gin, creating a stunning natural pink hue.
Leave your rhubarb gin to infuse for around two weeks.
Step 5: For an Even Stronger Rhubarb Flavour
After two weeks, we still had some fresh rhubarb to use, so we replaced the original pieces with freshly chopped rhubarb and poured the infused gin back into the jar.
This extra step is completely optional but gives the gin an even more pronounced rhubarb flavour.
Step 6: Strain and Bottle
Once you're happy with the flavour and the rhubarb has lost most of its colour, strain the gin into a clean bottle or jug.
A quick tip: make sure you place a bowl or bottle underneath your strainer first. After waiting weeks for your homemade rhubarb gin, the last thing you want is to pour it down the sink!
How to Serve Homemade Rhubarb Gin
Rhubarb Gin and Tonic
For a simple, refreshing serve:

- Ice
- Fever-Tree Elderflower Tonic Water
Fill a glass with ice, add the rhubarb gin and top with tonic water. The elderflower beautifully complements the tart, fruity notes of the rhubarb.
