World Whisky Day has been and gone but that doesn't mean you can't enjoy delicious whisky cocktails all year round! For those who might not know, we blend our own whisky here at Summerhall Distillery called The Broody Hen.


How did we come to make whisky?

It's quite common for many distilleries to open and create gin or vodka while their whiskies sit in casks, and that isn't far off how we came to create The Broody Hen whisky range. 

We opened Summerhall Distillery in 2013 and launched Pickering's Gin in 2014. It was Edinburgh's first exclusive gin distillery for more than 150 years. We started to produce oak-aged gins, in casks from the Highlands, Islands and Lowlands of Scotland.

While searching for casks that would add flavour and personality to our gins, our journey took us to a whisky distillery in the Highlands. Amongst rows and rows of casks one particular lot spoke to us: five, stacked casks, which looked like a hen coop. 

The Broody Hen name harks back to 17th century whisky in Scotland. High taxation meant many illicit distillers went to great lengths to avoid the taxman - hiding their produce in surprising places: barrels in funeral corteges and bottle, beneath broody hens... from this we created our name and hatched our plan...

This single malt has a gentle aroma of vanilla toffee and mum's apple pie, sprinkled with brown sugar. Extremely smooth texture that's sweet to taste on the palate, and finished with kitchen spices and a hint of peat-smoke.  

The simplest way to enjoy this whisky is neat, on the rocks or adding a little water - whatever floats your boat.

Our beautifully versatile blended scotch has a delight light honey and butterscotch aroma with bursts of delectable caramel, vanilla and manuka honey. It finished with a kick of spice like french toast with a sprinkle of cinnamon. 

This blend can be enjoyed, neat, on the rocks, in a highball or a cocktail. You can see a list of our perfect serves below.
